Weekly meal planning

 

I hope this helps you get out of the food rut or scrolling through the same Pinterest recipes week after week! Sometimes we just need ideas to change up our meals. Keep in mind, I have a 6 year old and 8 year old so gourmet meals are limited.

I will post my weekly meals plans every weekend and archive the older ones here so you can browse and mix and match ideas.

Week of 11/12/17

Sunday: Beef stew served over mashed potatoes

Monday: Chicken, broccoli, cheddar and pasta casserole (I make my own roux because cream of chicken soup freaks me out a little bit. I do use it occasionally if I’m crunched for time)

Tuesday: Homemade baked potato soup, big salad, and homemade bread (bread courtesy of Dan because I DO NOT BAKE and Dan does NOT COOK…. unless it’s spaghetti)

Wednesday: Baked spaghetti (Thanks, Dan!) with side salad.

Thursday: Leftover night – I always make a ton of soup and there is always leftover spaghetti so a good way to use up what we have.

Friday: Chicken tacos or quesadillas. Three out of the four of us love chicken tacos so it’s often on the menu.

Saturday: Homemade pizza night. Salad and fruit. The kids love making the dough and with their help, it’s kind of like I’m not even baking! We have amazing pizza delivery, but we still like to make our own from time to time.

Week of 11/5/17

Sunday: BBQ chicken Quesadillas topped with a BBQ ranch sauce and chopped green onions. Side of Corn.

  • Bonus about this dinner – I roasted 4 chicken breasts in the oven with olive oil, salt, garlic powder and onion powder. I used half of it for dinner and the other half to make chicken salad sandwiches for lunch the next day. After roasting, I tossed half of the chicken with BBQ sauce and chopped the other half for the sandwiches. $7 worth of chicken provided dinner for 4 and lunch for 2.

Monday: This Sausage, bean and pasta stew. Side of garlic bread and salad.

Tuesday: Corned beef and cabbage.

Wednesday: Oven baked chicken fajitas with peppers and onions. Side of avocado.  *Like most kids, mine are not a fan of peppers so they had regular chicken tacos.

Thursday: Sloppy Joes with homemade sauce. Side of tater tots and fruit.

Friday: Grilled cheese with bacon and ham and soup.

Saturday: Pizza night!
