Hey everyone! It’s rest day, random day stuff that I want to talk about today, but first…. I’m on Instagram now! I felt old as sh!t setting up an account. Hashtag say what?! I’m going to completely embarrass myself and tell you this – I actually had no idea hashtags were used on Instagram. No joke. I really thought hashtags were only used on Twitter and no, I’m not going on Twitter…. I don’t have that much to say everyday! I don’t even have a personal Instagram account, but I wanted to reach more people and it has been fun. If I’m being for reals…. cheap and lazy is the biggest reason I went over to Instagram. I wanted to share some occasional videos and I was so annoyed trying to find a free program to convert and compress videos to post here on the blog. Yesterday was a rest day and trying to catch up on errands and life stuff. On my way out and really happy for some sunshine!
Proof it is a rest day – I’m wearing something other than running shoes!
I got some stuff and things done and then I had this amazing salad for lunch All sorts of veggie goodness topped with tortilla strips and my homemade Chipotle Ranch dressing. Love that stuff!
Here is my easy recipe for Chipotle Ranch dressing:
In a mini food processor combine and pulse all ingredients:
1/2 cup sour cream
1/2 cup Mayo
3 tablespoons of milk (more or less for desired consistency)
1-2 Chipotle peppers in adobo sauce
1 tablespoon lemon juice
1/4 tsp. salt
1/4 tsp. each of onion powder, garlic powder, paprika
1/2 tsp. dried parsley
This dressing is so good. I usually make all the dressing without the chipotle peppers for a simple Ranch and save half in a container and then add the chipotle peppers to make a second dressing. Super D loves homemade Ranch! Tip: skip the milk and you have a delicious, spicy spread for tacos!
In other exciting news – I met the 5k training group I am working with as a running mentor! It was our first meeting so we didn’t run. It was mostly a meet and greet and to review some injury prevention information. It is always good to be reminded of what to do! I told them I needed this group as much as them because I’m pretty sure Dan is tired of listening to me talk about running all of the time! 🙂 The group seems awesome. There are over 20 people signed up for the program. Running is something that brings so many different types of people together and I love that. There is a good mix of men and women of all ages in the group. Many of them have run a 5k before, but it has been a long time since they ran or they have been injured in the past and want to gear up for a 5k safely. The training plan is well developed for easing into the miles. There was also a handful of people trying for improved race times so let the pacing begin! Our first run will be on Sunday and I am really excited to get to know all of them and see them start on day one and finish with a 5k race in June. I will definitely share updates along the way.
As for me, I’m off to get in some speed work…..outside!
