What’s for dinner? What’s for dinner? Week of 1/14/18

 

I have another delicious weekly meal plan for you this week that I hope gives you some ideas when you get the dreaded, “what’s for dinner question?”. I typically do my grocery shopping on Saturday, but since our schedule was a little off, I went on Friday and so I have made a couple of the dishes already over the weekend. We also hit up BJ’s on Saturday for the things we need around the house and I found this:

Snack time for when we got back! I love Moe’s, but we don’t have one nearby. I was skeptical about whether or not the queso would be as good as when ordered in the restaurant, but it was delicious! This should help me get through the times I can’t go in for their veggie burrito and chips and queso.

Week of 1/14/18

 Sunday: Whole roasted chicken, mashed potatoes, steamed broccoli

Monday: Homemade sloppy joes (recipe to follow), side of avocado

Tuesday: Veggie stir fry over noodles, spring rolls, side of edamame

Wednesday: Italian sausage stew, salad, French bread

Thursday: Breakfast for dinner: eggs, biscuits, bacon, fruit

Friday: Left over night

Saturday: dinner out with the kiddos

I am not a big meat eater and until I started making homemade sloppy joes, I never ate them. I combined ideas from several recipes I found and created one that we all love!

1 lb. ground beef

3 tablespoons finely minced onion

1/2 a green pepper, finely minced

8oz. can plain tomato sauce

1 tablespoon Worcestershire sauce

1 tablespoon yellow mustard

1/4 cup ketchup

1 teaspoon each of chili powder and garlic powder

1 tablespoon red wine vinegar

Brown meat with peppers and onions, add all remaining ingredients and simmer for 30 minutes.

This is so good! The red wine vinegar really helps tenderize the meat in a short amount of time since I make mine on the stove top for a quick dinner.

I made the veggie stir fry last night and this was all of the veggie goodness that went into it!

 

Sunday is usually my big cooking day so aside from dinner I will also be making hummus and couscous salad to go with my lunches throughout the week. I always need a good side dish for lunch!

Aside from all of my cooking and eating, I had some great work-outs. I had a couple of runs and a really fun Zumba class this week. Every time I take a Zumba class, I am aware of how tight and stiff I am in my hips and back. I will stick with some low impact cross training to mix things up and work on my stiffness. I know yoga will be great for me, but I’m still struggling with actually trying it. I need to find the motivation!
