Taco…. Monday??


I never seem to make Tacos on Tuesday so last night was Taco Monday! I am not a big meat eater so when I make tacos with ground beef, I usually have a bean and cheese taco with all of the veggies. You have to have homemade salsa!


My kids don’t like spicy food, but they sure like this salsa. Here is how I make mine:

1 can diced tomatoes, drained

2 tablespoons onion, diced

1/2 -1 jalepeno, diced

1 tablespoon cilantro

1/2 teaspoon sugar

1/2 teaspoon salt

1-2 teaspoons ground cumin

juice of 1/2 a lemon or juice of 1 lime

Mix in a small food processor and you are set! If you like a chunkier salsa then drain your tomatoes in a mesh strainer for about 10 minutes, chop all the veggies in the food processor first and then add the tomatoes at the end for a few pulses.

Everyone loves this salsa when I take it to parties or have people over for dinner. It is so easy! I will also need to share my real cheese queso recipe and homemade enchillada sauce soon. My love for Mexican food is intense.

What. The. Hell. I got into my car yesterday and found this creepy thing. Thanks Dan and Si-Guy! The kids are really into pranks right now which usually means I find all kinds of toys in the pantry, but they have now stepped up their game. My first thought was where do you get a miniature hand? At the barber shop- that’s where. Thanks, Boris the Barber. Apparently he has some weird “toy” machine that is coin operated. Si-Guy got this instead of the bouncy ball. Of course.

My “abs”….more like stomach muscles are really feeling the crunches I did on the Bosu ball yesterday. So today is a rest day from exercise, parents don’t get a rest day from life. 🙂 Si-Guy’s birthday is on Thanksgiving this year – pumpkin pie AND birthday brownies. The kiddos can’t wait. I need to finish up his birthday shopping and Thanksgiving food shopping then it is off to a Thanksgiving party at the school.

Any prank ideas? I have to get even for the creepy hand!
